I love sharing stories about my life because it allows you to get to know me just a little better. Yesterday was the first day of October. I thought I would share a Holiday that is celebrated by everyone we know on October 2 National Homemade Cookies Day #HomemadeCookieDay.
When I was younger I used to work at our local grocery store Minyards as a cashier but I also would fill in the Bakery/Deli when they needed help. One day my parents went to purchase dinner at Minyards. My Cousin Jeffery was with them.
Jeffery when to the Bakery and purchased Ranger Cookies for himself. Even though I worked in the Bakery I hadn’t heard of Ranger Cookies so I had never tried them. Jeffery gave my sister and I one and we both loved the Cookies so much.
With today being National Homemade Cookies Day and Charlie’s friends Bradley and Tim here today I thought we might make Ranger Cookies for this evenings dessert. Would you like to join us in making Cookies and we can make your favorite Cookies as well to take home to your family?
Recipe for Ranger Cookies
Prep Time: 20 mins Cook Time: 10 mins Additional Time: 30 mins Total Time: 1 hr
Servings: 48 Yield: 4 dozen cookies
Directions
- Preheat oven to 325 degrees F (165 degrees C).
- Beat butter, brown sugar, and white sugar together in a bowl until creamy.
- Beat in eggs and vanilla extract until smooth.
- In a separate bowl, whisk together both amounts of flour, salt, baking soda, and baking powder. Mix flour mixture into the liquid ingredients.
- Gently mix rolled oats, corn flakes, and coconut into the dough until thoroughly combined.
- Drop the dough by tablespoons onto baking sheets.
- Bake in the preheated oven until the cookies are light golden brown, 10 to 12 minutes.
- Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
